In una terrina metteteci la maionese, il mezzo peperone , l'avocado, il pomodoro e l'arancia tagliata a dadini, mescolate tutto in modo da ottenere un composto omogeneo. Aggiungete il prezzemolo e il basilico tritati, poi il sale . Soffriggere la cipolla con l'olia d'oliva extra vergine, aggiungete le zucchine e fatele cuocere per 2m'. Spegnete il fuoco e lasciate raffreddare. Incorporate&lt;br /&gt;&lt;br /&gt;delicatamente, la panna montata in una ciotola a parte. Fonderate il fondo in&lt;br /&gt;&lt;br /&gt;una pirofila da portata con i savoiardi leggermente inzuppati nell'alchermes.&lt;br /&gt;&lt;br /&gt;Ricoprite con uno strato di crema al mascarpone.Di nuovo disponete di uno strato&lt;br /&gt;&lt;br /&gt;di savoiardi ricoprendo ancora con la crema.&lt;br /&gt;&lt;br /&gt;Terminate con uno strato di crema. Fate sciogliere il burro in un tegame: quando è ben caldo aggiungete le ciliegie e fate bollire per 5m'; versate il kirsh, fiammeggiate e fate raffreddare. Dividete i tuorli dagli albumi ; montate separatamente i tuorli con lo zucchero a semolato e gli albumi con lo zucchero a velo, poi montate la panna. Incorporate delicatamente le ciliegie al composto di tuorli e zucchero, poi unite la panna montata e gli albumi avendo cura di non sgonfiarli. Imburratela e distribuiti ve il composto, facendolo aderire bene.&lt;br /&gt;Montate i tuorli con lo zucchero e quando la crema sarà gonfia unite la ricotta, poco alla volta, stemperata con la forchetta.&lt;br /&gt;Fate ammorbidire la gelatina in acqua fredda, strizzatela e unitela a 3 cucchiai di succo di arancia, mescolando a fuoco medio finché si sarà sciolta. Fate raffreddare e mescolatela al composto di ricotta. Amagalmate infine il liquore, la metà delle albicocche tagliate a dadini e la panna montata.&lt;br /&gt;Versate la crema nel guscio di biscotti, livellatela, coprite con la pellicola e mettetela in frigorifero per un oretta.&lt;br /&gt;Tagliate a spicchi le albicocche tenute da parte e disponeteli ordinatamente sulla superficie del dolce. Fate sciogliere a fuoco basso la gelatina di albicocche con il succo di arancia rimasto e stendetela sugli spicchi di frutta con un pannello. Avvolgete l'impasto in una pellicola per alimenti e metterlo in frigorifero per almeno 30m'. 2)Nel frattempo in 1 ciotola sbattete con una frusta la ricotta con lo sciroppo d'acero e 1/2 scorza grattugiata di limone. Mettete ad ammollare la colla di pesce in acqua fredda. 3)Riprendete la pasta e stendetelo con il matarello in una sfoglia con cui fodererete uno stampo di crostata di 26cm. Rivestite con carta da forno riempite e cuocete per circa 20m' in forno a 200°. Estraete e lasciate raffreddare. 4)In 1 piccolo tegame anti aderente, scaldate il sugo di limone e fatevi sciogliere la colla di pesce strizzata. Intanto scaldate in una padella l'olio d'oliva, aggiungete il filetto di platessa tagliato a dadini, le cozze, la polpa di granchio tritata, il peperone verde ed i pomodori tagliati a dadini. Irrorate con mezzo bicchiere di vino bianco,. Incorporate i pomodori pelati e proseguite la cottura per 15m'. Quando gli spaghetti sono al dente, scolateli e versateli nella padella con il sugo. Scaldate l'olio d'oliva in una padella e fate rosolare l'aglio per alcuni secondi. Aggiungete 120ml di acqua, il peperone verde a stri scioline, i pomodori a pezzetti, le zucchine tritate, le acciughe, i capperi e le olive nere tagliate a metà. Cuocete la salsa per 20m', poi, incorporate il basilico tritato e, a piacere, aggiungete un pizzico di sale e uno di pepe.&lt;br /&gt;Mentre la salsa sta cuocendo, portate a ebollizione dell'acqua leggermente salata in una pentola e cuocete al dente gli spaghetti. Irrorate con il vino e l'aceto e mescolate. Disponete il coniglio a pezzi nella marinata preparata e lasciatelo macerare coperto in frigorifero una notte intera. Rigirate i pezzi un paio di volte.&lt;br /&gt;&lt;br /&gt;2)Sgocciolate il coniglio ed asciugatelo. Fatelo quindi rosolare per qualche minuto in una casseruola in un po d'olio caldo. Passate al colino la marinata, mettetela ad intiepidire sul fornello e unite alla carne. Cuocete a fuoco lento per circa 40m'.&lt;br /&gt;&lt;br /&gt;3)A cottura ultimata, togliete i pezzi di coniglio dal tegame e disossateli con attenzione, tritate finalmente la polpa ricavata (se volete insieme al fegato anche)&lt;br /&gt;&lt;br /&gt;4)In un altra casseruola mettete gli odori rimasti e di prosciutto. Fate cuocere lentamente per 15m', allungando con qualche cucchiaio d'acqua calda in cui avrete stemperato la salsa di pomodoro. Aggiungete il trito di coniglio, mescolate e lascia insaporire per qualche minuto. Aggiustate di sale e pepe.&lt;br /&gt;&lt;br /&gt;5)Durante la cottura dei salmì, preparate la pasta, impastando la farina con uova, sale e latte. Stendete l'impasto in una sfoglia di medio spessore e ritagliate vi di tagliolini fini.
